    The most delicious marinated and roasted vegetables! This dish is traditionally made in an outdoor clay oven or tandoor in the Indian villages. Now you can create and enjoy juicy tandoori vegetables as an imaginative side dish or as a meal, right in your oven or on the grill!

    Roasting tofu or paneer (Indian cheese) with the crisp outside and soft but juicy inside will have you making this tandoori dish over and over again!

    (You can even make with chicken, if you marinate for 3 hours and bake chicken as normal)

    Serve in a wrap or inside a pita for a satisfying meal.

    What else do I need to make this recipe:

    8 oz. paneer, halloumi or firm tofu 

    2 red or green peppers

    8 medium mushrooms

    2 medium red onions

    Optional: Cauliflower, zucchini, carrots

    1½ tbsp. lime or lemon juice

    ½ cup plain yogurt

    2–3 garlic cloves

    1 inch fresh ginger (or enclosed pack)
