Aloo Gobi - Fragrant Cauliflower Potato (PB)

Prep: 10 minutes  Cook: 20 minutes  Serves: 4–6

what you need

1 Aloo gobi kit
1 medium cauliflower, cut into 2 inch florets
1 large yellow or red potato, cut in 1 inch cubes
1 medium onion, coarsely chopped
2 medium tomatoes, cut into 8 pieces each
1–2 tablespoons oil
½–1 teaspoon salt
2 tablespoons chopped cilantro (optional)

  1. Bring to boil 2 quarts of water in a saucepan. Add cubed potatoes, cook for 5 minutes and drain. Prep remaining ingredients.
  2. Heat oil in a large frypan on medium-high. After 1 min, remove from heat and immediately mix 3–4 seeds from Spice Pack #1 in hot oil. Seeds should crackle (see QR code below for video). If seeds do NOT crackle, heat more and repeat. If seeds crackle, add the rest and stir. If seeds turn black, it’s burnt! Redo Step 2 with extra pack.
  3. When crackling subsides, add onion. Mix and return to medium heat. Sauté for 5 minutes, stirring periodically. Add Spice Pack #2 and mix well. Add Hot Spice if desired. Add tomatoes. Stir and cook for 3–4 minutes.
  4. Add cauliflower, potato and ¼ cup water and cover. Cook for 10 minutes on low, sprinkling additional water during cooking if pan dries out. Add fresh cilantro, if used, and mix well.

Serve with rice, pita, in a wrap or as a creative side to your everyday meal such as burgers.

Experiment with your favorite vegetables instead of cauliflower or potato—peas, carrots, sweet potato, etc.
