Poriyal - Aromatic Seasoned Vegetables (PB)

what you need
1 Poriyal kit
One of the following, fresh or frozen:
1 pound beans cut into ½ inch fingers
1 small head of cabbage, chopped
1 medium cauliflower, cut into 1 inch florets
1 pound carrots, cut into ½ inch cubes
1 pound peas
1 tablespoon oil
½–1 teaspoon salt

- Heat oil in a large frypan on medium-high. After 1 minute remove from heat and immediately add 3–4 seeds from Spice Pack #3 and mix. Seeds should crackle (see QR code below for video). If seeds do NOT crackle, heat oil a bit longer and repeat. If seeds crackle, add the rest and stir and cover immediately.
- When crackling subsides, add Spice Pack #4 and return to medium low heat. When Spice #4 turns golden brown, turn heat to low. Add Hot Chili, if desired, and optional Spice Pack #5, and mix.
- Add vegetable, ½ cup water and mix thoroughly with spices. Cover and cook over medium low heat (add salt after 5 minutes), stirring occasionally. If pan dries out, sprinkle a little water. Cook time—cabbage/cauliflower 10 minutes; carrots or peas 15 minutes; beans 20 minutes.
- When vegetable is cooked but firm, remove cover and allow excess water to boil off. Add Spice Pack #6 (optional) Mix well and serve.
