Yellow Tadka Dal

what you need
1 Yellow Tadka dal/lentil soup kit
½ medium onion, thinly sliced
2 medium tomatoes, cut into 8 pieces each
1–2 tablespoons oil
½–1 teaspoon salt
Juice of ½ lemon
1 fresh green chili/jalapeño, quartered (optional)
1 clove garlic, chopped (optional)
2 tablespoons chopped cilantro (optional)

- Add 3 cups hot water to Yellow Lentil Pack and Spice Pack #2 in a 2 quart pan, and bring to a boil. Add as much Hot Spice as desired. Simmer covered, stirring occasionally until lentils are almost mushy (about 20 minutes). Add water to maintain thick, soupy consistency.
- Heat oil in a large frypan on medium-high. After 1 minute, remove from heat and immediately mix 3–4 seeds from Spice Pack #1 in hot oil. Seeds should crackle (see QR code below for video). If seeds do NOT crackle, heat oil a bit longer and repeat. If seeds crackle, add the rest and stir. If seeds turn black, it’s burnt! Redo Step 2 with extra pack.
- When crackling subsides, add onion, garlic and green chili (if used). Stir and return to medium heat. Sauté until onions start to brown, about 5–10 minutes. Add tomatoes and stir for 4–5 minutes until cooked.
- Add cooked lentils and 1 cup water and simmer uncovered, stirring occasionally for 10 minutes. Add water if needed to achieve soupy consistency. Add lemon juice and serve. Optional: Add fresh cilantro when cooked and mix well.
